for the sauce:
300 g lobster bisque
2 pcs lobsters of 400 g each
50 g extra virgin olive oil
30 g shallots
20 g onion
5 g ripened garlic
80 g jowl bacon into strips
80 g julienne lard with herbs
200 g cardoncelli mushrooms
